Rice Varieties Differ in Blood Glucose Responses of Humans

Five rice varieties, Dongiin, Ohdai, Chuchung, Taibaik and Calrose, with similar chemical composition, were tested for postprandial blood glucose and insulin responses in healthy human volunteers. The glucose responses were the highest in Dongiin, followed by Chuchung, Taibaik and Calrose, and the lowest in Ohdai. The insulin responses were higher in Dongjin, compared with other varieties. The differences were not due to amylose content, gel consistency, amylograph viscosity and in vitro starch hydrolysis rate. We conclude that rice varieties can differ in postprandial blood glucose and insulin responses and that chemical composition and some physicochemical properties are not a predictor of glucose responses.
